COOK THE PASTA
Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
Tip: Rinse the pasta briefly with warm water to prevent sticking but avoid rinsing too much to keep the starch for better sauce adhesion.

MAKE THE CHEESE SAUCE
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, until the mixture becomes a light golden paste. Gradually add the milk, and whisk until the sauce is smooth and begins to thicken. Stir the shredded cheese, salt, pepper and any additional seasonings.
