SAUTÉ THE AROMATICS
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened and translucent. Stir the diced red bell pepper and continue cooking for another 5 minutes, stirring occasionally, until the pepper softens. Add the minced garlic, ground cumin, paprika, ground coriander and red pepper flakes (if using). Stir constantly for about 1 minute until fragrant.
Tip: Stirring the spices into the oil helps release their full flavor before adding the tomatoes.

SIMMER THE TOMATO SAUCE
Pour in the crushed tomatoes and stir well, scraping up any bits from the bottom of the pan. Season with salt and black pepper. Reduce the heat to low and let the sauce simmer for 10–15 minutes, stirring occasionally, until it thickens slightly. If the sauce becomes too thick, add a splash of water to loosen it.
Tip: A longer simmer develops deeper flavors, so if you have time, let it cook for up to 20 minutes.

MAKE WELLS AND ADD THE EGGS
Using the back of a spoon, create four small wells in the sauce. Carefully crack an egg into each well. Cover the skillet with a lid and cook for 5–7 minutes or until the egg whites are fully set but the yolks are still slightly runny. If you prefer firmer yolks, cook for an extra 1–2 minutes.
Tip: For evenly cooked eggs, avoid stirring the sauce after adding them.

SERVE AND GARNISH
Remove the skillet from the heat. Sprinkle chopped parsley over the shakshouka. If desired, add crumbled feta for extra richness. Serve hot with slices of crusty bread to scoop up the sauce.
Tip: Warm the bread slightly before serving for an even better experience.
