Pozole is a traditional Mexican stew made with hominy and slow-cooked pork, simmered with spices. Garnish with cabbage, radish and lime.

Ingredients

Instructions

  1. PREPARE THE INGREDIENTS

Rinse the hominy thoroughly under cold water and set aside. Trim excess fat from the pork and cut it into large chunks. Peel and halve the onion. Smash the garlic cloves lightly with the back of a knife.

Tip: Using canned hominy saves time, but dried hominy offers a firmer texture if soaked overnight.
  1. COOK THE PORK

In a large pot, add pork, onion, garlic, bay leaves and salt. Cover with water and bring to a boil over medium-high heat. Skim off any foam that rises to the surface. Reduce heat and simmer for about 2 hours or until the pork is tender and easily shreds.

Tip: For extra flavor, roast the onion and garlic before adding them to the broth.
  1. PREPARE THE CHILE SAUCE

Remove stems and seeds from dried guajillo and ancho chilies. Toast them in a dry skillet over medium heat for 1–2 minutes until fragrant. Transfer to a bowl, cover with hot water and let soak for 15 minutes. Blend the soaked chilies with a cup of their soaking liquid, cumin, oregano and a pinch of salt until smooth. Strain the sauce to remove any solids.

Tip: Adding a bit of broth to the blender helps create a smoother sauce.
  1. COMBINE AND SIMMER

Once the pork is tender, remove and shred it. Strain the broth to remove onion, garlic and bay leaves. Return the shredded pork to the pot, add hominy and stir in the chile sauce. Simmer for 30 minutes to allow the flavors to meld.

Tip: Letting the pozole sit for an extra 10 minutes after cooking enhances its depth of flavor.
  1. SERVE WITH GARNISHES

Ladle pozole into bowls and serve hot. Offer garnishes like shredded cabbage, sliced radishes, chopped onions, lime wedges, avocado and tortilla chips for extra texture and flavor.

Tip: Squeeze fresh lime juice over each bowl before serving to enhance brightness.
