PREPARE THE LOBSTER
Fill a large pot with enough water to fully submerge the lobster. Add 1-2 tablespoons of salt per liter of water to mimic seawater. Bring the water to a rolling boil over high heat.
Tip: A salted water boil enhances the natural sweetness of lobster meat.

COOK THE LOBSTER
Using tongs, carefully place the live lobster into the boiling water, head first. Cover the pot and cook for 8-10 minutes for a 500g lobster, adding 2-3 minutes for each additional 250g. The shell will turn bright red when done.
Tip: Do not overcook, overcooked lobster meat becomes tough and rubbery.

COOL AND DRAIN
Using tongs, transfer the cooked lobster to an ice bath or a plate to cool for a few minutes. Let excess water drain before handling.
Tip: Cooling prevents the meat from continuing to cook and firms it up for easier cracking.

CRACK THE SHELL
Place the lobster on a stable surface. Twist off the claws and knuckles, then crack them using seafood crackers or the back of a knife. Split the tail in half lengthwise and remove the meat.
Tip: Use kitchen shears to cut through the softer underside of the shell for cleaner extraction.

Arrange the lobster meat on a plate and serve with melted butter, fresh lemon wedges and a sprinkle of fresh herbs
Tip: Pair with garlic butter for extra richness or serve with a light salad for balance.
