Description

Hummus is a creamy Middle Eastern dip made from blended chickpeas, tahini, lemon juice and garlic. Blend all ingredients until smooth and serve.

Ingredients

Instructions

  1. PREPARE THE CHICKPEAS

If using canned chickpeas, drain and rinse them thoroughly under cold running water to remove excess sodium and any canning liquid. If using dried chickpeas, soak them overnight in water, then boil until tender.

Tip: For extra smooth hummus, remove the chickpea skins by rubbing them between your fingers or using a clean kitchen towel.
  1. BLEND THE BASE INGREDIENTS

In a food processor, combine the tahini and lemon juice. Process for about 30 seconds until the mixture becomes light and creamy. Scrape down the sides and process again for another 15 seconds.

Tip: Blending the tahini and lemon juice first creates a smoother texture.
  1. ADD GARLIC, SEASONINGS AND CHICKPEAS

Add the minced garlic, ground cumin and salt to the tahini mixture. Pulse a few times to distribute the flavors. Then, add half of the chickpeas and blend for about 30 seconds. Scrape down the sides, add the remaining chickpeas and blend again.

Tip: If the mixture is too thick, add a tablespoon of cold water at a time to help smooth it out.
  1. DRIP OLIVE OIL AND ADJUST CONSISTENCY

While the food processor is running, slowly drizzle in the olive oil and continue blending. If needed, add additional water, one tablespoon at a time, until the hummus reaches your desired consistency. Blend for 1–2 minutes until completely smooth.

Tip: Using cold water helps make the hummus light and fluffy.
  1. TASTE AND ADJUST FLAVORS

Stop the processor and taste the hummus. If needed, add more lemon juice for tanginess, extra salt for seasoning or a pinch of cumin for depth. Blend again briefly to incorporate any adjustments.

Tip: Hummus flavors deepen after resting, so let it sit for 10 minutes before serving.
  1. SERVE AND GARNISH

Transfer the hummus to a serving bowl and use the back of a spoon to create a swirl on the surface. Drizzle with extra olive oil and sprinkle paprika on top for color. Serve with pita bread, fresh vegetables or as a spread.

Tip: Store leftover hummus in an airtight container in the refrigerator for up to 5 days.
